  • 2 cups almond flour
  • ¼ cup ground flaxseed
  • ½ cup unsalted butter, melted
  • 5 large eggs
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp xanthan gum (optional, for texture)
  • 1 tbsp apple cider vinegar

Instructions:

  1. Preheat your oven to 350° (175°C). Line a loaf pan with parchment paper or grease it lightly.
  2. In a large bowl, combine the almond flour, ground flaxseed, baking powder, salt, and xanthan gum (if using).
  3. In a separate bowl, whisk together the melted butter, eggs, and apple cider vinegar until well combined.

  6. Bake for 45-50 minutes, or until a toothpick inserted into the centre comes out clean.
